Only 20\u00a0percent of the world\u2019s production of 225\u00a0million metric tons is traded internationally. The United States produces 20\u00a0percent of the world\u2019s salt, and China\u00a015\u00a0percent. Mexico, the seventh biggest producer, extracts 8\u00a0million metric tons of salt annually, exporting it to Japan and North America. Although Mexico\u2019s salt industry, on the country\u2019s Paci\ufb01c coast, is highly mechanized, a few small-scale operations survive where the crystals are gathered by hand, as here. The chemical industry mops up 60\u00a0percent of the salt consumed in the world each year, and a further\u00a010\u00a0percent is spread on icy roads. The remainder supplies the \ufb01shing industry (which uses it to preserve \ufb01sh), the food industry, and is used as table salt. An individual eats 7\u00a0to 8\u00a0grams of salt per day. Too much salt is unhealthy and increases the risk of developing high blood pressure.
